Sweet Ginger Chicken

Ingredients:

  • 2 lbs boneless chicken breast, cut into bite-size pieces
  • 1 -2 tablespoon olive oil
  • 1 garlic clove, crushed
  • 2 tbsp sweetener (I use Truvia)
  • 2 tbsp Dijon mustard
  • 4 tbsp water
  • 2 tbsp freshly ground ginger
  • 4 garlic cloves, peeled and crushed
  • Half-salt and pepper to taste
  • 1 tsp cayenne pepper (optional)

Directions:

  • Heat oil in a large skillet, add garlic and fry about 1 minute.
  • Add chicken pieces and cook until lightly browned.
  • Remove chicken.
  • Add remaining ingredients, heating over medium.
  • Heat, until well mixed and dissolved.
  • Add chicken and bring to a hard boil.
  • Reduce heat and simmer for 20 minutes.
  • Serve over hot cauliflower rice.
