Sautéed Spinach with Bacon and Mushrooms

Ingredients:

  • 3 slices Selection smoked bacon 50% less salt, cut up
  • 1 tbsp canola oil
  • 2 green onions, chopped
  • 1 C. sliced button mushrooms
  • 6 oz. fresh baby spinach
  • 1/4 tsp. black pepper

Directions:

  • In a medium size skillet heat oil.
  • Add the onions and mushrooms and cook for 2 minutes.
  • Add bacon pieces mix well.
  • Add in the spinach and cook till it has wilted (about 5-6 minutes).
  • Season with the black pepper and serve.

Makes 2 servings.
